Grilled Cabbage “Steaks” Recipe

Skip the sirloin and head straight for the cabbage.

Okay, we know these are not grilled meat steaks. Tbh, these are potentially even better?

Cabbage cooks quickly and makes the best side — or even main dish! We topped ours à la wedge salad with bacon, blue cheese, AND ranch dressing for good measure. Leave the bacon off if you prefer to keep these vegetarian. Grilled cabbage is an excellent “blank canvas” to carry out any other flavors that you may have your heart set on, so feel free to customize as you see fit to find your true cabbage soulmate. Other fantastic options would be a buffalo style cabbage, a Caprese style cabbage, or a simply dressed grilled cabbage with lemon and garlic. You really can’t go wrong!

Grilled Cabbage Steaks Recipe

Yields: 4 servings | Prep Time: 0 hours 15 mins | Total Time: 0 hours 30 mins

Ingredients

1 large head of cabbage, cut into 1/2-inch-thick rounds
Extra-virgin olive oil, for brushing
Kosher salt
Freshly ground black pepper
Pinch of crushed red pepper flakes
Chopped cooked bacon, for serving
Crumbled blue cheese, for serving
Freshly chopped green onions, for serving
Ranch dressing, for serving

Instructions

  1. Heat grill over medium-high heat. Brush cabbage steaks on both sides with oil and season with salt, pepper, and red pepper flakes. Place on grill and cook until tender, about 5 minutes per side.
  2. Top with bacon, blue cheese, and scallions and drizzle with ranch dressing before serving.
