Yummy dinner today - home-made butter chicken (I usually put lots of veggies - potato, cauliflower, green/red/yellow peppers, green peas, chunks of onion) with basmatti rice.

Delivered to the grandkids since this is one of the dishes that they will eat everything including the veggies.

on Diwali day I cooked 18 paratha with channa n aloo curry! A friend brought me some prasad and a box of Indian sweets when she passed by to get roti n curry.

Today I am going to a memorial reading😒 so I will eat everything they offer except beef. Looking fwd to sirni πŸ˜”

I don't care much for chocolate cake but this is a good recipe, this I can handle. Spelt flour could be used instead of regular flour.

CHOCOLATE BEET BUNDT CAKE

1 1/3 cups

Natural Cane Sugar

1 cup

Butter

1 Β½

Medium Beets

Β½ cup

Beet Juice (water left from steaming)

3

Eggs

3 oz.

Unsweetened Chocolate

2 cups

Spelt Flour

1 Β½ Teaspoons

Baking Soda

1 Teaspoon

Sea Salt

1 Teaspoon

Vanilla Essence



Steam or boil beets until soft.  Reserve Β½ cup of the water (beet juice).

Puree cooked beets in a food processor using Β½ cup of beet juice.

Melt chocolate in a double boiler on a low to medium heat.

Cream butter and sugar together.

Add vanilla, melted chocolate and pureed beets.

Mix until smooth and add the eggs one at a time.

In a separate bowl, mix the flour, baking soda and salt together and

add to the Beet mixture, beat until smooth.

Grease and flour a bundt pan. (or double layer 9 inch, or approx 12 cupcakes)

Pour batter into pan.

Bake at 300 degrees for 40 – 45 minutes.  If using 9 inch or making cupcakes, reduce baking time to 20 – 25 minutes.

Experiment!!  Add Β½ cup of chocolate chips, or chopped nuts, dried fruits, or even fresh pitted cherries.

To finish this Bundt Cake off, we top it with a Glaze.

GLAZE

Β½ cup

Whipping cream or full fat coconut milk

4 oz.

Semi-sweet chocolate

2 Tablespoons

Butter or coconut oil

Chop the chocolate and place in a bowl.  Put the whipping cream and butter in a saucepan and bring to a boil over a medium heat.  Watch it carefully and don’t let it boil over.  Pour the cream and butter over the chocolate and let it sit until the chocolate is melted.  Stir it all together until it is smooth.

Drizzle Glaze over cooled cake and let it set.  ENJOY!!

I like salad for lunch (no curry/rice though)

Today, I chopped up in small pieces - cucumber, grape tomatoes, radishes, green/yellow/red peppers, red onion, baby spinach and avocado. Added a dash of balsamic vinegar/extra virgin olive oil/sprinkle of salt.

The best lunch!!!

Hubby had his with a toasted cheese and tomato sandwich made with whole-grain flax bread.

Channa n aloo curry......yummm.  one of my fave.

Did you have any goja for Diwali?

I have been craving this for 46 years!!!

No idea how to make it and I don't want to learn.....I want someone to make it for me!!

no gojah this way.  I have not had that for few yrs.  my mom used to make the best but these days she doesn’t manage.
I have not made a lot of things since hubby passed away…I was so spoilt by him when it came to cooking special stuff ….he always helped or I didn’t make things like gojah or butter parsad.

46 years is a long time to crave a food…

Today I cooked goat curry ( omg is $9 per pound pls don’t tell me y’all does buy for $3 a lb😬) with dhal n basmati rice….

The other day I stew cabbage with tomatoes n fat shrimps and was surprised to see my son and my lil girl devour it with paratha…they are picky
