When I was in high school Cammie Ramsaroop daughter told us a story that her dad went up the Rupununi and the host cook some nice food. Cammie was impressed and commented how nice the "beef" was. That was when he was informed that it was horse meat. Too late to try and throw up.

I know a pilot who use to fly thousands of pounds of horse meat weekly from Saskatchewan and Alberta to France.  Big business and big money there.

For the Europeans kangaroo meat is something exotic, a delicacy, for the Australians is just pet food, besides Kangaroos are regarded as an agriculture pest so the aussies get rid of their pest and on top of that make money out of it.
