Chef Marcus Samuelsson heads to Queens, NY, on the fourth episode of No Passport Required. Inside New York’s largest and most diverse borough, Samuelsson spends time talking with cooks, restaurateurs, and others from the Indo-Guyanese community, learning how they identify with all of the different parts of their culture and uphold it through dance, sports, and — of course — food.
The host also eats dishes common across Guyanese and Caribbean food traditions, many of which draw influences from other cultures. He tries chickpea-laden doubles, traditional Guyanese pepperpot, bake and saltfish, blood pudding, pine tarts, and sweet coconut salara. He plays cricket, goes to a Hindu mandir, makes roti at home, and takes part in a Guyanese bush cook.
