Kosher salt will draw out too much moisture from the meat. I like my Salmon to be tender and juicy.

I never stick to recipe..i add or substitute ingredients to my liking .i always ‘play around’ with recipes

i have the Harissa powder but dont use Aleppo powder ( I have the 7- spice- arabic dry seasoning, Sumac n Zaatar n I use a bit pink Himalayan saltâ€Ķmy salmon is always moist n juicy as i dont like it dry either
