So I never cooked at home n I was 16 yrs whn I left my parents home (not because I was lazy but I had 3 oldrr sis who took over the kitchen n i had other chores) except that i learnt to cook my own(single) paratha roti. My sismade the 2st dough..but i did the rest after..just the 1 roti for myself..so since I was 11-12 i was clapping my own roti too..1 ‘go’..no put-down’!!

I witness how my sis cooked greens..like fry bora or ochro..n also dhal so i had an idea how to do this so whn i started to live on my own,sharing an apt with a gf /batchmate from UG, i started to cook a few dishes n learnt from my gf as she cooked stew, cook-up, chowmein, fried rice n how to bake BREAD!!! Ie the old fashioned way. I tried out parsad n sweet rice too n even dhal puri as i had seen my mom do this.

After  I got married i collected recipes from Sunday newspapers n amy adopted daddy had a Caribbean cookbook so i got a few recipes from him n started to cook using recipes..or I asked others how to make certain dishes..like vermicelli cake, methai, sirni, plantain chips etc.  for some reason, i am good with recipes as almost everything i try , comes out good or ok..except for sponge cake, pera n sugar cake (I failed several times n gave up after a while)

After I left Gy, i discovered instant yeast so i have to tweak my oldbread recipe untili get it perfect to suit me..

I got recipe from cans n boxes (lasagna, taco etc)  butnow with internet n esp youtube cooking videos, i have made stuff that i never tried before like pastries, cassava pone buns, tennis rolls, cheese rolls FAT methai, coconut buns, bara , karhi..imust say that there r few really good videos that i prefer..namely mathhewguyanesecooking, jehancancook n metemgee .  There is also a natasha trini cooking on fb n ive tried her croissant recipe n it came out so good.  I had never ever tried making my own pastry but i did it (a tedious task) but recently i experimented with frozen puff pastry n made cream cheese danish..it was awesome!! I also tried it for cheese rolls n it was ok, not as good as home made pastry

anyway..those who r looking  for GY pastry/snacks etc..i encourage u to try these videos..if someone likeme can cook using the videos..i think anyone can do it

will post a few pix..but ayuh nah find fault..im an amateur..

Ow Jane, I feel kicked to the curb by dat tennis roll. Ditched for cheese..ow me lawd!

So using the metem recipe..would you put in mashed vegetables also? I'm lost on that one.

I have made salara at christmas time way back..I used red and green colouring to give it the xmas spirit.

Guyanese Pine Tarts

Short crust pastry pockets filled with pineapple jam

Ingredients

For the dough

  • 4 cups All Purpose Flour
  • 1 cup butter 2 sticks (frozen)
  • ¼ cup vegetable shortening
  • ½ cup ice cold water

For the filling

  • 3 cups crushed or grated pineapple About 1 whole pineapple
  • 1 cup granulated sugar
  • 1 teaspoon cinnamon powder may use 2 cinnamon sticks
  • 2 egg yolks +1 tablespoon water beaten

Equipment

  • Hand pie cutter that is about 6 inches in diameter or a large circular object to use as a mold, e.g. a bowl or small pot cover or even a plate
  • Sharp object to cut the mould (knife)
  • Rolling pin

Instructions

Making the dough

  • Add salt then grate frozen butter using the shred side of a cheese grater into the flour.
  • Using a pastry blender or fork blend the butter into the flour but do not over blend, leaving little chunks of butter creates a really flaky texture.
  • Then add the vegetable shortening and combine until it is full mixed and crumbly
  • Add the ice water a little at a time and press the flour together to form a dough ball. Do not knead the dough as this will remove the flaky texture
  • Place in a ziplock bag and refrigerate for about 30 minutes

Making the filling

  • Combine the crushed pineapples, sugar and cinnamon in a small saucepan, on medium heat. Allow to come up to temperature then cook until all medium liquid cooks off and a jam forms. Set aside and let cool completely

Making the pine tarts

  • Preheat Oven to 350 °F
  • Divide the pastry dough into two and place one half back into the ziplock bag and back into the refrigerator
  • Working with the remaining half, roll the dough out until it is ⅛th inch thick, then using a circular mold cut 6 shapes out of the dough. You may need to cut three, then press the scraps together, roll out again and cut another three
  • Fill the center of each circle with 1 ½ tablespoons of pineapple filling. Then brush the around the edges with some cold water then fold over the edged to form a triangle.
  • Place on a greased baking sheet, then brush with the egg wash
  • Repeat steps 2 to 4 with the remaining pastry dough
  • Bake at 350°F for 20 to 25 mins, then remove from the oven and let cool before eating, the filling will be hot

Those are some fancy looking breads Jane😋😋

There’s a whole lot of things I haven’t done since my hubby passed away….I rarely bake breads…I made pine tarts and chz rolls once in the last 7 yrs. I  bake carrot cake, banana oatmeal bread  or zucchini cake once per mth.

you see, he was always helping me in everything I did. If I was going to cook curry, he would help cut up everything esp the onions and garlic, cut up chicken, veggies etc…even if he was going leave them prepared for me ( he worked shifts so he wasn’t always home when I got home) Also, he loved my cooking and always ate it more than once, nowadays cooking is only because I have to cook. He wasn’t the perfect husband but he was the best I could’ve hoped for

After seein all dem shiny breads my leh leh ah leak. I feel like doing some baking...maybe I'll go bake me a tv dinner.

I just been drinkin a Grace peanut punch but soon as I start enjoy it..it done. Dam thing used to sell for 99cents now its 1.39.

Da peanut punch sweet  sweet these days..used to like it before..long time one!! U know dem have milo in similar boxes..it like sugar water flavored with lilbit milo though..lol
